В частности, в статье выделены точки зрения зарубежных ученых относительно дефиниции понятия «реализация стратегии», в качестве основополагающего выделен процессный подход к определению. Научная новизна заключается в том, что на основе проведенного исследования выявлены ключевые тенденции развития рынка общественного питания за период 2020–2022 гг. В качестве основных статистических показателей были использованы: оборот общественного питания по субъектам Российской Федерации и на душу населения, число мест на предприятиях общественного питания, а также обеспеченность предприятиями общественного питания на 1 000 чел. населения. Сделан вывод о том, что, помимо продолжающихся посткоронавирусных трендов, таких как обеспечение высокого уровня качества и безопасности производимой продукции, изменение цепочек поставок, доставка готовой продукции и формат работы на вынос в современных условиях потребители становятся более экономными и рациональными в своих затратах и стараются оптимизировать свой бюджет. В качестве ключевых трендов 2022–2023 гг. остаются: налаживание взаимодействия предприятий общественного питания с потребителями, персонализация клиентов и обеспечение положительного «сарафанного радио», установление партнерских взаимоотношений с местными поставщиками продукции и ингредиентов для обеспечения стабильности поставок. В качестве направления дальнейших исследований обозначена оценка реализации стратегии предприятий общественного питания с учетом влияния выявленных тенденций.</p></abstract><trans-abstract xml:lang="en"><p>The article is devoted to the study of catering enterprises strategy implementation in the conditions of economic crisis situations of 2020–2022. In particular, the article highlights the foreign scientists’ points of view regarding the definition of the “strategy implementation” concept, and the process approach to the definition is provided as a fundamental one. The scientific novelty lies in the fact that on the basis of the study key catering market trends for the period 2020–2022 were identified. The following main statistical indicators were used: the turnover of catering in the Russian entities and per capita, the number of places in catering enterprises and the availability of catering enterprises per 1,000 population. It was concluded that apart from the ongoing post-coronavirus trends, such as ensuring a high level of quality and safety of manufactured products, changing the supply chains, delivery of finished goods and takeaway format, in modern conditions, consumers are becoming more economical and rational in their expenses and are trying to optimise their budget. In 2022 and 2023, the following trends remain: establishment of  interaction between catering enterprises and consumers, personalisation of clients, support of positive “word of mouth” and establishment of partnerships with local suppliers of  products and ingredients to ensure supply stability.
