In catering sphere, as an important element of economy, innovative technologies bring changes both to the cooking process and to consumption experience. Special attention has been paid to such risks as a decrease in the level of personal communication, emergence of dependence on automated systems, as well as stress and burnout among employees. The effectiveness of these strategies significantly affects the approaches to risk management in Russian catering enterprises. Using methods of qualitative and quantitative analysis, the study reveals the impact of digitalization on collective norms and values, as well as on the psycho-emotional state of employees in the changing market. The study results emphasize the need to develop strategies aimed at minimizing the negative consequences of digital transformations, such as adapting management models and implementing programs to support the psycho-emotional well-being of employees.
